Recipe: Raw Vegan Matcha Fudge Slice

Ingredients

Crust

  • 1 cup hazelnuts, activated
  • 1 cup buckwheat, activated
  • ¼ tsp monk fruit
  • ¼ cup coconut flour
  • 2 tbsp water (to bind)

Filling

  • 1 cup almond milk (or your preferred milk)
  • 1 cup pili nuts
  • 2 tbsp matcha (our premium ceremonial grade works beautifully)
  • 80g cacao butter, melted
  • 40g coconut oil, melted
  • ½ tsp monk fruit
  • 2 tbsp lucuma powder

Method

  1. Prepare the crust: In a food processor, process all the ingredients except water until crumbly. Add water and pulse until the mixture sticks together. Press firmly into a lined slice tin to create the base.
  2. Make the filling: Blend almond milk, pili nuts, matcha, monk fruit, and lucuma until creamy and smooth. With the blender still running, slowly pour in the melted cacao butter and coconut oil until everything is silky and well combined.
  3. Assemble: Pour the filling over the crust, smoothing the top with a spatula.
  4. Set: Place in the fridge (4–6 hours) or freezer (2–3 hours) until firm.
  5. Slice & enjoy: Cut into squares or bars and enjoy the fudgey, matcha-rich goodness.
