raw vegan Brigadeiros truffle recipe

There are many truffle recipes I adore. I wanted to create a texture that are smoother and creamier and these truffles happened.

They look pretty amazing with the colourful coating, right? You can try other coatings like goji berry, coloured buckwheat, other superfood powders. These truffles last several days in the fridge but pomegranate powder can absorb moisture and turn sticky so I added chopped goji berries on top afterwards.

RAW VEGAN BRIGADEIROS TRUFFLE

ingredients:

2 cups cashews, soaked, drained and rinsed

5 dates, pitted

1/4 cup water

200ml cacao powder

16-20 drops stevia

pinch salt

3/4 cup melted cacao butter

direction:

first, soak the dates with water to soften

blend all ingredients except cacao butter.

Add the cacao butter and blend till smooth

chill in the fridge for a few hours until the texture is firmer and easier to handle.

roll into balls and coat the truffles with your chosen coatings.
