Bamboo Salt can be roasted anywhere from once to nine times, and each additional roast increases purity and mineral concentration. Nine also holds cultural significance in Korea. It’s traditionally considered a lucky number, associated with longevity and endurance, and used in celebrations marking milestones meant to last.
By the ninth roast, the salt reaches extremely high temperatures, often over 1,000°C, melting into a liquid that cools into a distinctive purple-grey mass, which is why 9-times-roasted bamboo salt is sometimes called “purple bamboo salt.” This repeated process removes far more impurities and concentrates minerals from the bamboo, clay, and pine resin more thoroughly than a single roast could, making 9x roasting the most prized traditional grade.
