Because of its bitter undertone of green tea it pairs so well with sweet dish.
Classic combination of matcha includes chocolate, vanilla , black sesame and adzuki beans but raspberry gives another sour element to the dish and looks amazing as well!
matcha and raspberry lava cake
serves 2-4
matcha dough
1 cup hazel nut, activated
1 cup desiccated coconut
4 tbs flax meal
20g lakanto or your preferred sugar
2 tbs matcha powder
pinch salt
enough water or nut milk to form a dough
process or blend all the ingredients except water into meal consistency.
Add your liquid slowly, checking the consistency
raspberry filling
2 cups raspberry
1/4 cup coconut butter, melted
2 tbs cashew butter, soften
sweetener of your choice
2 tbs tocotrienols (optional)
Blend all together
make a ball and fill with the raspberry filling (recipe below)
warm a little before serving
