How to make raw vegan marmalade – Yuzu marmalade

Yuzu is a Japanese citrus that has a beautiful delicate flavour. I was pretty excited to find organic Yuzu grown in Victoria, Australia.

You can absolutely use other citrus fruit to make more traditional marmalade and Yacon syrup and Luo han guo can be replaced with other preferred sweeteners also. Because we are using low GI sugar this is not preserving the marmalade. Use quickly and store in the fridge.


1 1/4 cup Yuzu juice

peel from 4 yuzu, sliced thinluy

2 tbs yacon syrup

1/4 tsp luo han guo

pinch of salt

Mix and dehydrated for approx. 24 hours or till it becomes sticky and thick
