After writing the last post about ketogenic diet I have been doing experimenting with lowering my saturated fat intake. (That means less coconut and cacao) I don’t plan to stay on this for too long but when the weather is hot like this it feels quite nice to do less of dense foods.
Buckwheat is one of my favourite things. They are actualy not grain but fruits. It is gluten free, high in amino acids and so versatile.
This is what I was eating while going through some emails this afternnoon! maybe it is not one of the decadent super delicious cookies i have made in the past, but to cover my sweet craving for today, it is just perfect.
HEMP + BUCKWHEAT COOKIE with Modern Day Support Alchemy Blend
(guten, sugar free, vegan and raw)
1 1/2 cup sprouted buckwheat
1/2 cup hemp seeds
1 tbs lucuma powder
1 1/2 tbs Lakanto (adjust the sweetener as you like)
1 tbs Modern day support Alchemy Blend (optional)
Place all the ingredients in a food processor and process till the mixture resembles a cookie dough.
Spread onto a teflex sheet and cut out dough using your prefered cookie cutter.
Place in a dehydrator for 6 hours and flip over to dry underneath.
