Apprently kale is so 2017. Now it is calulifower that is taking over a health food scene.
It is such a versitle vegetables. It can be one of the ingredents to make healthier rice, pizza crust, ice cream, smoothie and more.
Here I paired up with avocado to make chocolate mousse. You can substitute luo han guo with other sweetener of your choice. I just like this natural sweetener becuase it doesn’t raise my blood sugar level. You can also replace water with other plant based milk or/and add melted coconut oil or cacao butter for extra creaminess.
CAULIFLOWER AVOCADO MOUSSE
1 cup water
1 cup frozen cauliflower florets
1/2 cup cacao powder
1/4 cup tocotrienols
1/8 tsp luo han guo
1 medium avocado flesh
Blend all the ingredients in a blender till completely smooth
