raw vegan panna cotta with rose goji and berry jam

I created this recipe for Clemence Organics and it is such a delight.  I wanted to make something that goes with their branding and incorporate the divine rose that they also use in their products.

It takes a few steps but if you don’t want to insert jam cubes in the middle you can also layer them instead.

Rose, goji and berry jam:

1/3 cup  dried rose

1 cup hot water

infuse to make tea. Let it cool before use

1 tb + 1/2 tsp chia

1/3 cup dried strawberry

1/3 cup goji berry

small amount of betroot

Strain rose tea and blend with all the other ingredietns till thickens. Pour the mixture into long slim stick ice mould to set

Vanilla cheesecake:

1/4 cup rice syrup

1/4 cup almond milk

2 cups cashew

pinch of salt

6 drops of stevia

6 drops medicine flower vanilla extract or 1 tsp other brand vanilla extract

1/2 cup coconut oil, melted

Blend all the ingredients except coconut oil till smooth. Add the oil and blend throughly.

Assemble

Pour half of the mixture into a mould. Place it in the freezer till it sets.

Lay out the jam sticks and pour the rest of the cheesecake mixture to cover the jam sticks.

put it back in the fridge to set.

* If you don’t want to do extra steps you can also just spread jam in between
