We only use the finest  healing organic/biodynamic ingredients sourced sustainably, with empahasis on raw vegetables, fruits, fermented and whole natural foods.  Our philiosphy is based on raw and living food cuisine, enhanced with contemporary and traditional idea of macrobiotic and Chinese philosophy. Shoku Iku integrates  the knowledge from both East Asian tradition and modern nutrition.

Shoku Iku is also a place to be educated and appreciate the power of nature. Promoting healthy and ethical of food choices is one of our core vision and we offer regular raw food classes in the cafe as well as online.

What is Raw Living Food?

Raw food diet consists primarily of uncooked, unprocessed foods – fresh vegetables, fruits, nuts and seeds, sprouted grains and legumes. Some foods are eaten fresh, blended, frozen or dehydrated or warmed but not exceeding 48 degrees

Impressive advantages of raw food

  • increased nature’s beneficial compounds – phytochemicals, plant sterols, anti-oxidants, fiber and healthful fats
  • cooking reduces most of anti-oxidant capacity of most phytochemicals (with an exception of a couple)
  • enzymes which are responsible for converting certain phytochemicals into highly beneficial , bioactive metabolites are released however they are destroyed by heat. Our body does produce our own, but if the enzymes in foods are still there the body does not have to overwork to produce enough to digest the foods. Also there is a theory that we only produce a certain amount of enzymes in our lifetime. If we use up the limited enzymes that could lead to a difficulty digesting and many reported disorders and inflammations.
  • minimize or eliminate many harmful dietary compounds such as trans fatty acids, refined flour products, saturated fats from animal products oxidisation from oil
  • increased fiber.

Many raw foodists include so-called super foods to compliment their diet. It includes goji berries, camu camu, maca, cholorella, algae, raw cocoa, acai berries, lucuma etc..

I like combining raw food, with living food philosophy. I would like my nuts and seeds (except hulled hemp seeds) activated/ sprouted for maximum digestibility and nutrients. Fermented foods, such as sauerkraut, kefir, pickled vegetables are one of the most amazing super foods you can include in your diet

What is Macrobiotic?

The word “macrobiotic” came from Greece. “Macro” means big and “bios” means life. It involves eating unrefined grains as a staple food, supplemented with others such as vegetables, beans, sea vegetables, avoiding highly processed and refined foods.

Macrobiotic is more than a diet. It is a philosophy. It is a way to understand the laws of nature and to see how we can be part of tem, utilising them to achieve healthy and happy living. Remember any changes you make affect your life and things around you on many different levels. Because everything is connected with each other on a physical, emotional , mental and spiritual level.

Eating macrobiotically means…

  1. eating unrefined, whole organic/biodynamic and natural food
  2. eating what is available in your surroundings
  3. using fresh ingredients, utilizing everything-leaves, toots, skin and all
  4. reflecting seasonal changes in cooking
  5. Following the principle of balance (yin and Yang), avoiding extremely yin and yang food and cooking method
  6. creating a varied cooking style, variety in taste, preparing and cooking style
  7. chewing thoroughly before swallowing
  8. respect and be grateful for what is around you including food, resources, nature and people
  9. adjusting your eating according to your physical and mental needs

The general guidelines are

  • whole grains:40-60%
  • vegetables : 25-30%
  • beans/legumes and sea vegetables:5-10%
  • soup :5-10%

it varies greatly depending on your personal needs.

Integration

Integrating the knowledge from both East Asian system and modern nutritions offers a great understanding about how foods act in the body and ability to evaluate which foods and diets are optimal for ones constitution and condition.

East Asian Healing Systems

Yin and yang

The concept of yin yang, which has been applied extensively in the history of Asia, was originated from Chinese science and philosophy and modified and various versions have been created. Every single thing in this universe have both yin and yan quality. Yin yang are not opposing forces, but complementary opposites that interact within a greater whole, as part of a dynamic system.

Six divisions

Within Yin and Yang there are six divisions to understand more specific conditions and qualities of things.
Heat <-> Cold
Exterior <-> Interior
Excess <-> Deficiency
Understanding these principles can lead a greater understanding of ones conditions

Ayurvetic Healing System

The doshas can be understood as three forms of energies

  • Vata
  • Kapha
  • Pitta

A uniquenncombination of these three —doṣshas are used to define ones temperament and characteristics.

Modern Nutrition

Knowing about the carbohydrate, protein, fats as well as vitamin and mineral are also important for betterunderstanding of one’s condition and needs.. New facts are discovered continuously, including about denatured foods.
