Raw Vegan Pizza

You dont have to farewell your love for pizza when eating healthy…..

As always it is raw, gluten free vegan. That means no dairy or refined sugar and flour which are used in traditional pizzas.

There are many raw vegan pizza recipes out there and they are pretty tasty. I wanted to share a recipe that is relatively lower in fat using buckwheat and vegetable pulp for crust and less nuts for the sauce. You can even make it nut free if you replace pine nuts with other seeds (such as sunflower seed or hemp seeds) or even coconut meat.

Raw vegan pizza

crust:

1 cup buckwheat, soaked, drained and sprouted if possible

1/2 cup flax seed

2 tbs olive oil

1/2 cup vegetable pulp (i used beetroot and carrot pulp. green vegetable may make the crust a little bitter and more fiberous)

1 tsp curry spice

1/2 to 1 tsp salt

sauce:

200ml water

1 black garlic (you can use normal garlic if black garlic is not available)

2 cups basil leaves

1/2 medium sized zucchini

1 tsp salt

1/2 cup pinenuts, soaked, drained and rinsed

Method:

Place all the ingredients in a food processor and process until it becomes a dough. You can process till smooth or chunky as long as they can  spread easily.

Place on a reflex sheet and dehydrate ( around 4 hours) . When it’s dry enough flip onto the other side and dehydrate a little longer.

top up with your favourite vegetables ( marinate with your favourite depressing or even simple salt and olive oil)

blend all the sauce ingredients and pour onto the pizza.

You can briefly warm up before serving
