raw vegan shitake and coconut soup

Raw soups make a great light meal or adds another dimension to your meal.

Above all making raw soups are so easy

Ingredients:

5 dry Shitake

water

1 tsp gynostemma

1 small carrot

1/2 tsp bamboo salt

100g coconut meat

1/2 – 1 zucchini spirallised

Hydrate shitake in 1 cup of water

When they are hydrated blend all the ingredients except the zucchini in a blender (including the soaking water)  and blend till smooth.

add spirallised zucchini, topped with sauerkraut and activated sunflower seeds.
