These raw coconut macaroons are irresistible. They are gluten free and even nut free.
All you need to do is to process in a food processor and put them in a dehydrator. You dont have dehydrator?
you can simply chill in the fridge till firm.
If you don’t have an energy to have a filling you can also just roll into a ball and eat them like that!
another variation I love is a cacao flavour. Add some cacao powder and maybe a little cacao butter for a rich and tasty treat.
strawberry coconut macaroon balls
1 ½ cup dessicated coconut
¼ cup coconut sugar
pinch of salt
½ cup fresh strawberries
a few drops vanilla medicine flower extract
4 drops strawberry medicine flower extract (if available)
1 tbs coconut oil, melted
2 tbs flax meal
place dessicated coconut, sugar and salt in a food processor and process till it comes together. Add rest of the ingredients and process to bind everything together. Do not over process
roll them into balls and dehydrate for 4-5 hours till it is crusty outside but still soft inside
filling:
Mix soften coconut butter with vanilla extract and your preferred sweetener (I reckon coconut butter has a sweet flavour already but only if you’d like it sweeter)
